Now that I've been eating vegetarian about 90% of the time for about a month, I'm feeling pretty good. I'm pretty used to not eating meat, but still will if I feel like eating it. It's definately helped a few health problems I've had (namely, my digestion).

I'm finding myself looking more critically at restaurants. While eating vegetarian, restaurants tend to fall into two buckets:

-I can find something passible but might be kind of "meh" by it (sometimes prompting me to engage in that 10% of meat eating).
-Vegetarian friendly (I would happily go just for the vegetarian options).

I decided after a 16.4 mile bike ride, I wanted some mexican food. Mexican food can be one that could fall into one or the other, and I'm never sure which one a particular restaurant will fall into until I'm there.



With that in mind, I figured I'd fall off the wagon at mexican and give in to some chicken. We headed to Puerto Vallarta, in our little town of Covington, WA.

To my surprise, not only did they have an ample vegetarian section, but it looked like vegetarian dishes that I'd actually go there to eat. Immediately I tossed out my thoughts of chicken and looked at the offerings, of which there were 8 (and a lot of things that could be adapted as well).

I was immediately impressed by this based on what was there; there were vegetarian takes on some favorites, as well as some things that were different. I ordered avocado enchiladas and my husband got the spinach veggy quesadilla (but without the cream sauce). Both were very good, very flavorful.

My enchiladas came packed with fresh onions and avocado, topped with red sauce, cheese, lettuce, and pico de gallo. And I have to say, it was awesome. It didn't feel like I was getting something second rate or mashed together to accomodate me, but rather that it was a well thought out vegetarian dish. I only had one bite of hubby's quesadilla, but it was delicious, lots of spinach and veggies (mmm!). I got black beans with mine, and hubby got the other kind of beans they had. His seemed to need a little bit of spice, but nothing some salsa didn't solve.

We'll definately eat there again. :D The website is http://www.puertovallartarestaurantes.com/, they've got places all over WA. I'm always happy to find a place that can deliver good vegetarian food.
